Case of Villiera Monro Brut - Cap Classique
There has to be something at the top that is full and rich and can stand up to that main course. The Monro Brut is a blend of Chardonnay for finesse and Pinot Noir for richness and backbone. Most years, a small quantity of Pinot Meunier is included. Rich, creamy, yeasty nose, with a refreshing flavour on the middle palate developing finesse and complexity on the aftertaste. Extra yeasty flavour is provided by extended yeast maturation (5 to 7 years, depending on the vintage).
