Tasting Notes
Erica Cabernet Sauvignon is remarkable and in balance from start to finish! Aromas of blackcurrant, mulberry, cassis with a slight undertone of eucalyptus and earthiness. The fruit is bold and fresh enough to counter three years of new French barrels, the French oak add a whiff of tobacco and barrel spice to the nose. The palate reveals lively plum and juicy berries with structured acidity. Earthiness and spicy from the oak with smokiness and integrated tannins.

In The Cellar
All grapes were hand picked and sorted twice before a pure yeast culture was inoculated. The juice was pumped over the skins 3-5 times per day for 5 days. Once fermentation was complete, the wine was drained of the primary lees and transferred to a resting tank. Malolactic fermentation followed by a brief settling period in stainless steel tanks. After 12 months in first fill French oak barrels, it was returned to mature a further 24 months, so that the wine matured a total of 36 months in first fill French barrel.
