Bottle of Pascal Jolivet Sancerre Blanc Fume
The Sancerre Pascal Jolivet Blanc Fume is barrel aged for a short while. A quarter to a third of the combination is aged in barrels made of well-seasoned French oak for five to six months. The single vineyard Pouilly-Fume has bright scents of grapefruit zest, white peach, flint, and just a hint of vanilla-scented wood.
The palate has a rich, powerful structure with notes of lemon, stone fruits, and wet stone minerality. The wine has more weight, but the lengthy, satisfying finish, with its flinty sharpness and biting acidity, preserves Pouilly-Fume's characteristic raciness.
The Pascal Jolivet Blanc Fume goes very well with dishes like herb-roasted chicken, grilled shellfish, and goat cheeses. It is worth savouring on its own as an aperitif if you relish exquisite white wines.
