A dark incandescence, like light pooling on a midnight street after the rain. The smoky flint of a storm mingles with fresh green apples trailing fragrant lemon blossom, sugared limes, ethereal sage and woody scrub; pinned in by deeper tones of piecrust, apple tarte tatin, roasted hazelnuts. The palate is zingy and fresh, and absolutely drenched in limes. The purity of fruit from this vintage shapes the clean, vibrant palate, rounded off with a creamy mousse. This decadence is keenly balanced by a limey acidity with twirls of orange rind and pink grapefruit. A hallmark of the growing season this taut acidity is in balance with the subtle, elegant richness of the dosage, allowing this fine Vintage-Only Cap Classique to linger with a finish of glacé stone fruit extolling into a pithy finish.
