The Cabernet Sauvignon underwent fermentation in stainless steel tanks, with 3 to 4 pumpovers per day to promote gentle extraction. In contrast, the Malbec, Petit Verdot, and Cabernet Franc were fermented in small open-top vessels, where\u003cbr\u003emanual punchdowns were carried out 3 times daily for more precise tannin management.\u003cbr\u003eNotes of ripe black plum, blackberry compote, and Black Forest cake with a chalky mid-palate, subtle spice and refined tannins.\u003c\/p\u003e\n\u003cp\u003e12067 bottles produced.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eTotal time on skins was 11-14 days.
